HOW DO WE MAKE IT?
Ready- made masalas are a challenge to make. Especially for me as a chef, who belonged to the North of India, trying out something that was so intrinsically South Indian.
But I have an appetite for challenge! I took it up with the help of an old authentic recipe, straight from the cook book of my grandmother who hails from Hyderabad.
The first rule is of course maintaining authenticity. I have sourced and used the most authentic ingredients needed to concoct this humble, yet truly delightful and versatile food.
We use Byadgi chillies, methi seeds, chana dal, urad dal, whole dhania, mustard seeds, jeera, peppercorns, salt and of course CURRY PATTA or curry leaves! First the spices are roasted to a wonderful crispy colour and when their heady aroma says they are just right, we set them aside to cool off. After which, they go through a good round of stone grinding till the mix turns
into a coarse and finely powdered sambhar masala.
ALWAYS FRESH – I have scheduled this wholesome sambhar masala to be churned out almost every day. Why? Simply because I want everyone to enjoy its lip smacking goodness. I also want my dear customers to keep discovering how convenient and easy it is to make sambhar. And more importantly, when my customers buy Curry Patta batters they need to have this alongside to serve steaming hot with fluffy idlis or crispy dosas.
HOW TO USE THE SAMBHAR MASALA?
Simply add CURRY PATTA Authentic Sambhar Masala according to your judgment, to a mix of freshly cut vegetables, tomatoes, onions, pulses, tamarind and more. Stir the mixture well and let it simmer for about 20 to 25 minutes on a medium flame. Soon the mix is ready. A lovely aromatic, slurpy, delicious liquid mix!
HOW DOES THE SAMBHAR TASTE?
Authentic and really delicious. Spicy with lovely sour undertones that tease your palate and whet your appetite for more helpings.
HOW TO ENJOY IT?
Honestly you can even drink the sambhar just like that! But of course, a steaming hot bowl with chunks of idlis or medu vadas dunked in it is just mmmm. Bites of dosas dipped in sambhar also taste just right. Rice and Sambhar is of course a staple nutritious diet. You choose whatever goes for you!
