HOW DO WE MAKE IT?
This chutney actually is very simple to make, yet it needs that special touch in the right amount at the right time. I actually love its simplicity and its rugged taste and enjoy making it as much as I love seeing my customers eating it.
Essentially we use very basic ingredients like dried Indian red chillies, garlic, turmeric, ginger, onions, curry leaves, tamarind and asafetida. The chillies and onions are first separately roasted on a low flame to a nice crispy finish. Then both are added to a vessel and the remaining ingredients are tossed into this vessel and stirred well on a low flame till cooked. The mandatory cooling down over, the entire mix is stone ground to a lovely red dry powder. For a sign off this mix is tempered with mustard.
What is ready is a sweet tangy hot addition to your choice of
south Indian foods or even other popular snacks.
ALWAYS FRESH – I have to keep making this wonderful chutney regularly. Why?
Because this is a different kind of treat from Curry Patta and it has grown to be popular very quickly. And I would really want that when my customers buy Curry Patta batters, they can use the Mysore Masala to add some hot flavored excitement to their preparations.
HOW DOES THE MYSORE MASALA TASTE?
Spicy of course! With lovely smoky hints of the other simple base spices used.
It is simply a burst of a fresh, lip smacking, pungent taste that somehow hooks
you and keeps you asking for more.
HOW TO ENJOY IT?
This is ready to eat. All you do is add some water proportionally and get ready to add some spicy zing to a plate of steaming spongy idlis, spread it inside golden crisp dosas, on fluffy appams. Super for starters also like sandwiches, samosas, pakoras!
